Use of the ancient seasoning asafoetida dates back to the Roman era. Together with the Moghul empire, it made its way to India, where it is now a staple in Afghan and Indian cuisines alike.
Asafoetida (Hing Powder) is a sap that, when exposed to air, turns into a resin rather than a spice or herb. One kind of enormous fennel is used to harvest its sap from its roots.
An essential component of many Indian recipes is asafoetida. Asafoetida may be used in lieu of onions and garlic, which are avoided by certain Hindus and members of other religious groups. Like onions and garlic, it has a strong, somewhat soured, and sulfurous taste. Similar to how we cook with salt in the United States, it is used sparingly. |
